Email to subscribers was always there. I recall seeing it before. But yes, the pin to profile has vanished for posts in publications at the top right three-dot setting. However, you can go to Story Settings in the drop-down menu and there, you'll find the Pin this story to the top of your profile just under story preview. :-) Just checked.
